Wheat antibodies (anti-gliaden antibodies) trigger low-grade malabsorption problems sufficient to affect vitamin and mineral uptake. They also affect antigen processing probably at the TAP protein level, causing the immune response to other antigens to be smoke screened by the continued presence of wheat antigen.
